that 20+ states including Kentucky, Kansas, and Texas officially count ballots that are postmarked by election day. She didn't mention that ballots in Texas apparently must be received by the day after the election and Kansas allows 3 days after election day, according to Vote.org. It looks like Alaska allows an extra 10 days and CA 17 days for ballots to arrive as long as they are postmarked by election day.
Seems Boofer Boy may have boofed a little too much of something.

That does appear to be a risk. My state starts counting absentee after polls close.

CA allows for counting military ballots UP TO 17 DAYS AFTER Election Day (must be postmarked, tho)
