7. I understand the message they are trying to make, but it could have been much more powerful had they all had full carts

Since the intent is to show businesses that DEI policies are good for the bottom line, it would have been much more effective IMO to have all 100 people buy memberships (if they don't already have one) and show them in the store with full shopping carts.
