I typically nab enough to have for dinner and then lunch the next day. We have found that most of our casserole-type recipes make enough for two full dinners (also chili and soups), so many of our dinners are just the other half of earlier dinners that have been in the freezer. We also cut recipes back by as much as half some of the time to avoid leftovers.

You REALLY downsized! I can relate to the minimal storage space, we are in 1465 sq ft, and some of that is a screen porch! Periodically I have to go through major purges to clear out space—we have too much stuff! It all gets donated, we have closet shelf space for a while, and then it starts again. I currently have 4 boxes and a garbage bag of donations on the guest bed, waiting till the temps go above freezing to load them and take them.
