I don't really see The Godfather, the Road Warrior, or the first Terminator movies as, "gun movies." In a gun movie, the guns are not incidental, but are their own characters. Of these three, that is most true of the Road Warrior with Max's side-by-side and the masked guy's .357 revolver. Even so, they are bit parts.

My picks, in no particular order:

The Good, the Bad, and the Ugly. (converted SAA)
Sin City (Springfield 1911)
The Shootist (Colt Peacemaker)
Equilibrium (modified Beretta 92)
Dirty Harry (S&W m. 29)
The Wild Bunch (1911)
Enemy at the Gates (Mauser, Nagant)
Aliens (imaginary rifle)
The Matrix (misc.)
The Unforgiven (Schofield revolver, side-by-side)
