By default I am not offended if someone wishes me "Merry Christmas." But from a clerk in a shop I think "Happy Holidays" is more sensitive. It's the same as singing "Rudolph the Red-Nosed Reindeer" in a public school. I don't think the non-Christians are going to be permanently traumatized by it. It's certainly not in the same ballpark as "Joy to the World" or something like that. But wouldn't it be nicer to sing one of the winter songs that don't allude to Christmas, even to the Santa stuff? Likewise a clerk in a shop saying "Merry Christmas" isn't the end of the world, but if I knew the owners of the store were right-wingers who totally bought into the "War on Christmas" crap and who considered "Happy Holidays" to be a liberal plot, I'd take the "Merry Christmas" from the clerks in a different way. Of course I probably wouldn't be shopping at that store to begin with, but you see my point I hope.
