The chef requires that the imported-from-Japan atrocity called a Kobe Beef Patty must be cooked medium rare. This is 126 degrees F. (I looked it up.) He says you can't taste the exceptional quality of his beef if it's cooked to a higher temperature.
The state of New York requires that all ground beef, or foods containing ground beef, be cooked to 158 degrees F. This is within two degrees of well-done.
