Both Eich and Davis can hold whatever beliefs they like. The difference between the two is that Eich was head of a corporation and chose to resign when his personal beliefs began affecting the bottom line of the company he headed.
On the other hand Davis' job is a government position. She is the representative of the government and not just acting as her own person. When she denies services to people (taxpayers) she using the power of the government to deny those services. THAT is the basic problem. Davis can hold whatever beliefs she likes but when she uses her position as a government employee to inflict her beliefs on other people she is out of bounds and acting illegally.
Resigning from the position is not caving, it is not changing her stance. It is removing herself from a position that she is misusing to have power over other peoples lives. Her position as County Clerk does NOT give her the right to control how other people live when she is exercising it outside the law.
The only point that I have any sympathy with Kim Davis on is that the law changed since she took her oath in January. But her oath said she would support the US Constitution - which says that the Supreme Court is the final arbiter on the law.
Ignoring the original SCOTUS decision on same sex marriage and then ignoring the court orders to do her job should made her re-evaluate her position as County Clerk. Since it is obvious she is not willing to do the job as it now exists her only recourse is to resign. At least Brendan Eich cared enough to resign for the good of the company he had led. Kim Davis seems to only care about herself and the promotion of bigotry and hate.
