(13,445 posts)Way back in the early days I worked food and bar and I had the misfortune to take a job in a country club. I've seen a few skanky kitchens in my time, but honestly, I refused to eat the food there. I saw raw meat being mishandled (over raw fruit and salads!), I saw staff standing in that kitchen smoking a cigarette while standing over food, and I can't count the number of times I broke down food buffets that had been standing unchanged for hours. They had a club policy that members had to spend something like $50 per month in the club on food (or else they'd charge it to them anyway!) I used to joke that the $50 fee was for monthly exposure to salmonella.
By the same token, I have been in commercial kitchens that were absolutely clean in every aspect, and paranoid about keeping it that way. It was fast food.
I have no problem believing that Mir-a-lax-o is a gross kitchen.
