(38,890 posts)I baked 40 pumpkin pies this year - and my crusts look just like that - including (as described above) the one width variation where I meet back up with where I started the pinching. (I used to use the fork finish on my two-shell crusts, but I don't even use it for them anymore.)
As to the pie tins - most of mine are made in disposable tins (beause they are going to places I am unlikely to be able to retrieve the tins from - and because I only have about 8 pie tins that aren't disposable and I make my pies in batches of 16 and 24).
I'll defer to your judgment on the pecans, since I don't make pecan pies.
(Note: I'm not saying Sanders made this pie - just that the assessments on the crust don't ring true to me - given the hours I've just spent baking pies and the similarity between that crust and my 40.)
