I was thinking racism had to apply since in a hypothetical scenario of, say, a Latino family being refused a table in a restaurant by a white restaurant owner, it's unlikely that the restaurant owner is thinking "I think they might be from Mexico" or "I hate salsa music." No; he's thinking they're inherently different and inherently inferior--seeing color, to use your term--even when an anthropologist might classify both parties as white. And that is most definitely racist.
