I'm no expert on kidney beans, but some are a deep red in color while others are more pale. I suspect the ones that are more deep red have a different starch content as they seem to be the choice for when you want a more firm bean like chili con carne, although some consider it sacrilege to include them.
As far as red beans and rice go, the ones that are pale are the ones you want to use. Some people swear by Camellia brand, which is what I use.
