(28,493 posts)It's my go-to side dish for my Grecian chicken (marinate boneless cut up chicken breasts in [and you absolutely must do it in this order] oregano, chopped garlic, lemon juice, and olive oil) which is then grilled. I use a table top electric grill and get excellent results. The other side dish is stir fried veggies: carrot (sliced thin on the diagonal), green or red pepper, onion, zucchini, and snow peas. I cut up and refrigerate the veggies and stir fry one serving at a time.
I also do boneless pork chop teriyaki with those two side dishes.
What's really great is that the meats freeze wonderfully after they've been cooked, and when I want another meal I just take out one portion and heat it up in the microwave. I live alone, so figuring out single portions and how to save or freeze leftovers is huge in my culinary life.
