I cut the cauliflower into small florets and boil in water until tender. While the cauliflower is getting tender, I melt a quarter cup of butter with a teaspoon or 2 of garlic.
I drain the cauliflower after it's tender and place it in the food processor with salt, pepper, and the melted butter with garlic.
Favorite cheeses can be added to the mashed cauliflower as well.
I'm low carb so potatoes have been eliminated from daily diet. Cauliflower is an easy low carb filler.

Chop it in bite sized pieces, oil it heavily, sprinkle it with Greek seasoning or a garlic salt
