16. Yes, just don't use over-the-hill Portobello mushrooms

like I did a few years ago! I had to make enough for twelve people and my cream sauce looked murky after those sautéed mushrooms with their oxidized gills were stirred in. My small grocery store didn't sell much fancy stuff, and I wasn't familiar with Portobello mushrooms, so I didn't realize they undersides shouldn't be dark. My SIL told me I should have scraped them off. Oh well, I had made fresh green beans almondine in previous years, should have stuck with that!
