Egg sandwiches that don't run are usually cooked "over-medium" or "over-hard" ....
I do admit, however, to a weakness for pickled eggs at Joe Jost's in Long Beach CA ..

Cooked in a cast iron skillet in virgin olive oil, sunnyside up, with sourdough toast.
