A good Reuben is one of my top 2 or 3 sandwiches of all time anyway, and you remembered to use good pumpernickle rye, and not that faux rye served in many restaurants.
Another favorite, for another time: An avocado sandwich. Rich whole-grain bread, thick with avocado, add sliced red onion, tomato, and butter lettuce. A little salt and pepper. If you need a dressing, use a plain yogurt...I can't tolerate mayonnaise, ever.
Another: The BT. Leave off the L. Again, a rich, whole-grain bread, some yogurt dressing, soft bacon, and lots of slices of fresh tomato.

I like any kind of sliced meat with cheddar, kosher pickles on white bread. Mayonnaise too.
