Cold brew coffee refers to coffee that is brewed at room temperature or colder for extended periods. After filtering it can then be heated and served warm if you like. Coffee beans contain hundreds of chemicals, some of which are only water soluble at higher temperatures. So cold brewing results in a very different flavor profile. I've tried it and didn't like it as to me the coffee tasted very flat, but my favorite brewing method is espresso which is about as far away from cold brewing as you can get.

Some people do not like the acidity of coffee, so cold brewing may provide a much better flavor profile for them.
