Definitely do a bus tour to see Gulfoss (amazing waterfall you can get really close to), Geysir (the place for which they were named), and Ϸingvellir, the place where the Icelandic parliament was founded. The Ϸ is sort of their "th."

If you have more time, you can go see the volcano (unless you have already seen Kilauea) or some of the other harder-to-get-to areas.

Do some serious shopping for wool jackets, skirts, whatever. Great designs, and even if it's summer now, in 5 months, you'll be glad you did.

When in Amsterdam, do NOT limit your time to Amsterdam. Go see the old towns of Utrecht (35 minutes away by train), and Haarlem (even closer). I'd invite you over to see us in Düsseldorf (3 hours away by train), but we're leaving for the States in 10 days.
