Black beans and rice [View all]

Ingredients

1 can of black beans, drain and reserve juices
1 can of diced tomatoes with juices
! Tbsp. olive oil
I medium onion chopped
1/2 tsp of Italian seasonings or thyme
1 tsp of garlic salt
3 Tbsp. of apple cider vinegar
1/2 tsp of hot pepper sauce
2 cups of cooked rice

Directions

Cook rice and set aside
In large skillet, heat olive oil, add onion and sauté.
Stir in diced tomatoes with juice, beans, Italian seasoning, garlic salt. Cook about 3 minutes on medium high and stir occasionally.
Add vinegar, hot sauce, and reserved juices and simmer for 5 minutes. Stir occasionally.
Add cooked rice, mix well and continue to simmer and stir till juices are absorbed and rice is heated thoroughly.

made this last night and I liked it. The apple cider vinegar and Italian seasoning gives it a nice touch. It made about 4 cups so i ate the whole thing.
